MANGO SALSA:
1 1/2 cups chopped, peeled mangoes or peaches
1 medium red sweet pepper, seeded and finely chopped
1/4 cup thinly sliced green onions
1 TBS olive oil
1 TBS lime juice
1 TBS vinegar
1/4 tsp salt
1/4 tsp black pepper
optional: 1 jalapeno chile pepper, seeded and finely chopped
1. In a medium bowl combine all above ingredients.
2. Use this salsa with one of your favorite fish filets.
