Sandwiches

Warm Veggie Sandwich

A favorite of ours.

1 avocado, mashed (add a few squeezes of lemon juice)
1 tomato sliced (to your desired thickness)
italian salad dressing
1/2 onion, diced
3/4 cup sliced mushrooms (I slice with an egg slicer)
Lettuce or Spinach leaves
garlic powder or fresh garlic
Whole wheat buns
(soy) Cheese Slices- we prefer american or cheddar but any flavor of your choosing will work.

Add 1 tbs italian dressing to a medium frying pan. Warm pan and add onion. Cook for 1-2 minutes then add mushrooms. Sprinkle with garlic. Add sea salt, to taste. Cook until mushrooms are soft but not soggy.

Meanwhile, toast buns- either on a flat skillet or in the toaster.

Spread avocado on toasted buns, add a slice of cheese, and the cooked onion and mushrooms, top with tomato, lettuce/spinach and the other bun. Eat immediately.


Cold Veggie Sandwich


Whole wheat bread- bun, bread, tortilla roll- its up to you.
Sliced Cucumber (long)
Sliced Carrots (long thin strips)
Lettuce/Spinach leaves
Green Pepper (or any color)
Sprouts
Red Onion, sliced
Avocado, sliced
Sliced Tomato

Pick any of the above and layer each on the sandwich. Eat.

For extra taste try:
Dried basil or Italian seasoning
Dijon/ Honey Mustard
Italian Salad Dressing
