Broccoli, Tofu, Red Pepper Stir Fry
1 tablespoon oil
2 cloves garlic, minced
1 red bell pepper- cut in strips
2 crowns broccoli
1/3 cup vegetable broth
2-3 tablespoons Braggs Liquid Aminos (Soy Sauce substitute)
8oz (1 package) firm tofu, diced
1. Heat the garlic in the oil in a large skillet. Add the red pepper and broccoli. Cook until pepper is tender (about 5 minutes).
2. In a separate pan cook tofu.
3. Add the soy sauce and vegetable broth. Bring to a boil. Continue until warm. Add tofu.
Serve over brown rice.
