Asian Noodle Bowl

Asian Noodle Bowl (from "Its good for you" pampered chef cookbook)



2 cups bok choy, sliced thin
1/2 cup thinly sliced green onions with tops
8 oz (1 cup) mushrooms sliced, white or portobello
1/2 cup julienne-cut carrots, 1 inch long
one dash dried ground ginger
2 cloves garlic
3 cups water
1 can (14 oz) vegetable broth
2 tablespoons Braggs Liquid Aminos (soy sauce substitute)
1 package ramen noodle (I add a second pack for extra noodles) ***Throw away the season packet***
1 tsp season salt

Slice all the vegetables. Place mushrooms, carrots, ginger and garlic in a 4 qt pan. Add water, broth, soy sauce and seasoning. Bring to a boil and add bok choy, onions, and noodles. Cover and remove from heat. Let stand 3 minutes. Serve immediately.
