2 cups Whole-Wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 beaten egg
1 1/2 cup mashed bananas (about 5 medium)
1 cup sugar
1/2 cup melted butter or cooking oil
1/4 cup chopped walnuts
1. Combine flour, baking powder, baking soda, cinnamon, nutmeg, and 1/4 teaspoon salt. Make a well in center of flour mixture. Set aside
2. In a medium bowl combine eggs, bananas, sugar, and butter. Add egg mixture all at once to flour mixture.
3. Stir until just moistened. Batter will be lumpy. Fold in nuts.
4. Spoon into baking pan
5. Bake in 350' oven for 55-60 minutes (9x5x3 inch pan) or 40-45 minutes (71/2 x 3 1/2 x 2- inch pan).
or until a toothpick comes out clean.
*Cover loosely with foil for the last 15 minutes to prevent overbrowning.
*Cool on a wire rack for about 10 minutes.
